Ingredients For peanut butter roasted chicken

  • 2 lb
    chicken leg-thigh quarters, separated
  • 1 c
    creamy peanut butter
  • 4 Tbsp
    teriyaki sauce
  • 3 Tbsp
    honey
  • 1 Tbsp
    Italian dressing mix
  • 1 tsp
    onion powder
  • 3 oz
    honey-roasted peanuts
  • 3/4 c
    panko bread crumbs
  • 4
    garlic cloves, minced
  • 2 tsp
    ground allspice
  • 3 tsp
    ground cumin
  • 1 Tbsp
    sea salt mixed with black pepper

How To Make peanut butter roasted chicken

    Preheat oven to 375 degrees F.

    Place chicken pieces in a large ziptop bag.

    In a small bowl, combine peanut butter, teriyaki sauce, honey, Italian seasoning and onion powder; whisk together for 2 minutes until blended.

    Pour mixture over the chicken pieces in the bag; seal and refrigerate for 20 minutes, turning occasionally.

    After that, use tongs to remove the chicken pieces from the bag of marinade and place them on a large plate. Set aside.

    In a large food processor, combine honey roasted peanuts, breadcrumbs, minced garlic, allspice, ground cumin and sea salt/black pepper. Process for 3 minutes until blended.

    Place crumb mixture in a another large ziptop bag; add the chicken and seal. Shake to coat for 35 seconds.

    Place them in a lightly greased 13- x 9-inch baking dish.

    Bake 35 minutes or until the chicken is cooked through.
