Ingredients
- 1 cup smooth peanut butter
- 1 can coconut cream (14 oz)
- 1 tablespoon red curry paste
- 3 tablespoons soy sauce
- 4 teaspoons brown sugar
- 1 tablespoon fish sauce
- 2 tablespoons rice vinegar
- 2 pounds chicken thighs, boneless, skinless, sliced
- 3 cups fresh spinach
- rice, for serving
- fresh cilantro, for garnish
How To Make peanut butter coconut curry with chicken

Step 1In a small bowl mix the peanut butter, coconut cream, red curry paste, fish sauce, soy sauce, brown sugar, and vinegar. Mix well and pour into a slow cooker.

Step 2Add the chicken and toss in the sauce.

Step 3Let cook on low for 3 to 4 hours. In the last 15 minutes add the spinach and cook until spinach is wilted. Serve over cooked rice.
