Ingredients

  • 1 cup smooth peanut butter
  • 1 can coconut cream (14 oz)
  • 1 tablespoon red curry paste
  • 3 tablespoons soy sauce
  • 4 teaspoons brown sugar
  • 1 tablespoon fish sauce
  • 2 tablespoons rice vinegar
  • 2 pounds chicken thighs, boneless, skinless, sliced
  • 3 cups fresh spinach
  • rice, for serving
  • fresh cilantro, for garnish

How To Make peanut butter coconut curry with chicken

  • Step 1
    In a small bowl mix the peanut butter, coconut cream, red curry paste, fish sauce, soy sauce, brown sugar, and vinegar. Mix well and pour into a slow cooker.
  • Step 2
    Add the chicken and toss in the sauce.
  • Step 3
    Let cook on low for 3 to 4 hours. In the last 15 minutes add the spinach and cook until spinach is wilted. Serve over cooked rice.
