This recipe is based on YouTube's BBQ Pit Boys video for peanut butter chicken. I created this delicious recipe, baking the chicken in the oven, and I used lime juice instead of lemon.

Ingredients For peanut butter baked chicken thighs

  • 2 c
    creamy peanut butter
  • 1/3 c
    dark soy sauce
  • 1/2 Tbsp
    garlic powder
  • 1 tsp
    crushed red pepper flakes
  • 1/3 c
    light brown sugar
  • 2 Tbsp
    cider vinegar
  • 1/2 c
    lime juice
  • 3/4 c
    honey
  • 3 tsp
    black pepper

How To Make peanut butter baked chicken thighs

    In a medium bowl, combine the peanut butter, soy sauce, garlic powder, red pepper flakes, brown sugar, cider vinegar, lime juice, honey and black pepper.

    Whisk together until blended and smooth.

    Place 6 bone-in chicken thighs in a large ziptop bag and the remaining 6 chicken thighs in another ziptop bag.

    Spoon the peanut butter mixture into the two bags of chicken, squeeze all the air out of the bag, and seal. Shake a few times to coat the chicken; refrigerate for 2 hours.

    Preheat oven to 350 degrees F.

    Line a baking sheet with aluminum foil and coat with cooking spray.

    Using tongs, grab the chicken thighs out of the ziptop bags and place them on a prepared baking sheet.

    Brush the chicken thighs with the mixture out of the bags.

    Bake in the preheated oven for 30 minutes, until no longer pink and juices run clear.
