Cornish hens are a favorite around here because we each get to enjoy both the white and dark meat.

Ingredients

  • 2 - cornish hens, split (1 1/2 pounds to 2 pounds each)
  • 1/2 teaspoon salt
  • 1 cup dried peaches, chopped
  • 1/4 cup fresh orange juice
  • 1 - green onion, sliced
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons brown sugar
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil

How To Make peach glazed cornish hens with ginger

  • Step 1
    Place hens, skin side up, in a 13 x 9 x 2 inch baking dish. Sprinkle with salt; broil 6 inches from the heat 3 to 5 minutes or until the skin is lightly browned. Remove from the oven.
  • Step 2
    Combine peaches and remaining ingredients in a small saucepan. Cook over medium heat 5 minutes, stirring occasionally.
  • Step 3
    Pour sauce over the hens. Bake uncovered, at 375° for 30 minutes or until done.
