Ingredients
- 2 - cornish hens, split (1 1/2 pounds to 2 pounds each)
- 1/2 teaspoon salt
- 1 cup dried peaches, chopped
- 1/4 cup fresh orange juice
- 1 - green onion, sliced
- 2 tablespoons fresh ginger, grated
- 2 tablespoons brown sugar
- 2 tablespoons fresh lime juice
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
How To Make peach glazed cornish hens with ginger

Step 1Place hens, skin side up, in a 13 x 9 x 2 inch baking dish. Sprinkle with salt; broil 6 inches from the heat 3 to 5 minutes or until the skin is lightly browned. Remove from the oven.

Step 2Combine peaches and remaining ingredients in a small saucepan. Cook over medium heat 5 minutes, stirring occasionally.

Step 3Pour sauce over the hens. Bake uncovered, at 375° for 30 minutes or until done.
