  • 2
    cornish hens, split (1 1/2 pounds to 2 pounds each)
  • 1/2 tsp
  • 1 c
    dried peaches, chopped
  • 1/4 c
    fresh orange juice
  • 1
    green onion, sliced
  • 2 Tbsp
    fresh ginger, grated
  • 2 Tbsp
    brown sugar
  • 2 Tbsp
    fresh lime juice
  • 1 Tbsp
    soy sauce
  • 1 Tbsp
    vegetable oil

How to Make Peach Glazed Cornish Hens with Ginger


  1. Place hens, skin side up, in a 13 x 9 x 2 inch baking dish. Sprinkle with salt; broil 6 inches from the heat 3 to 5 minutes or until the skin is lightly browned. Remove from the oven.
  2. Combine peaches and remaining ingredients in a small saucepan. Cook over medium heat 5 minutes, stirring occasionally.
  3. Pour sauce over the hens. Bake uncovered, at 375° for 30 minutes or until done.
