patsy's crispy chicken breasts

This started out as a Barefoot Contessa recipe,but I made a few changes so I call it mine. I don't like fried chicken breasts unless it's cooked this way,it comes out crispy,juicy and delicious!

- - 4-6 boneless,skinless chicken breasts
- - 1 c flour
- - 3 t. salt
- - 1 1/2 t. black pepper
- - 1 1/2 t. granulated garlic
- - 2 eggs
- - 1 1/4 c seasoned bread crumbs
- - unsalted butter
- - oil
How To Make patsy's crispy chicken breasts

Step 1Pound the chicken breasts until they are 1/4-inch thick. Season with 1 t. salt,1/2 t. pepper and 1/2 t. garlic. Combine the flour,1 t.salt, 1/2 t.pepper and 1/2 t. garlic. In a second dish,beat the eggs,1 t. salt,1/2 t. each pepper and 1/2 t. garlic powder. In another dish,combine the bread crumbs. Coat the chicken on both sides with the flour mixture,then dip into egg mixture and dredge in the bread crumbs pressing lightly. Heat 1 tablespoon butter and 1 tablespoon oil in a large sauté pan and cook 2-3 chicken breasts on medium-low heat for 2-3 minutes on each side,or until cooked through. Add more butter and oil and cook the rest of the chicken.
