I use the corkscrew noodles because they have little ridges that catch the sauce. This is my little sister's favorite meal.

You won't get bored eating this chicken dinner. Roasting the garlic and mixing it with butter adds a deep, rich flavor to the creamy Parmesan sauce. Bite-sized pieces of chicken breasts and chunks of broccoli soak up the flavor of the sauce. The roasted garlic sauce sticks to the corkscrew pasta nicely, but you could use any shape of pasta you prefer.

Ingredients

  • 10 cloves garlic
  • 3 - chicken breasts
  • salt, pepper, or your favorite seasonings
  • 1 cup butter, divided
  • 1/2 cup chopped fine onions
  • 2 pints half and half
  • 1 tablespoon dried oregano
  • 2 cups grated Parmesan cheese, divided
  • 1 box corkscrew pasta or whatever pasta you prefer
  • 1 package chopped broccoli

How To Make pasta and chicken in roasted garlic sauce

  • Take the skins off the garlic while the oven preheats.
    Step 1
    Preheat the oven to 350 degrees F and take the outer skins off the garlic.
  • Bake the garlic and seasoned chicken.
    Step 2
    Place the garlic in the oven for 15 minutes. After 15 minutes, season the chicken with salt and pepper or your favorite seasonings. Place the chicken in the oven with the garlic.
  • Remove the garlic and continue to bake the chicken.
    Step 3
    Take the garlic out when it is soft, about 40-45 minutes. Finish cooking the chicken until it is done.
  • Add half of the butter, garlic, and chopped onions to a skillet.
    Step 4
    In a skillet, place 1/2 cup of butter. Add the onions and squeeze the soft garlic, mashing it into the butter.
  • Cook until onions are translucent, then add remaining butter, half and half, and oregano.
    Step 5
    Cook until onions are translucent. Then add the remaining 1/2 cup of butter, half and half, and oregano. Turn the heat to low.
  • Boil the corkscrew pasta.
    Step 6
    Place a pan of water on the stove and bring to a boil to cook the noodles. Add noodles when the water comes to a boil and cook according to package directions.
  • Cut the cooked chicken into bite-sized pieces.
    Step 7
    Take the chicken out of the oven and cut into bite-size chunks or shred.
  • Add chicken and 1 cup of Parmesan cheese to the sauce.
    Step 8
    Add the chicken and 1 cup of Parmesan cheese to the garlic sauce.
  • Stir until combined and leave on low heat.
    Step 9
    Stir the cheese, sauce, and chicken so that it is combined. Leave on low heat.
  • Add broccoli to the pasta when almost done cooking.
    Step 10
    Add the broccoli to the pasta when the pasta is almost done.
  • Drain the pasta and broccoli.
    Step 11
    Drain the pasta and broccoli, and put them into a large dish.
  • Pour the chicken and sauce over the pasta, mix, and add Parmesan cheese.
    Step 12
    Pour the chicken and garlic sauce over the pasta. Toss and sprinkle the remaining cup of Parmesan over the pasta.
