Ingredients
- RICE:
- 2 cups brown rice, raw
- 1 can chicken broth, low salt
- 1/2 cup water
- CHICKEN:
- 1 sleve - ritz crackers, finely crushed
- 1/2 cup parmesan cheese
- 4 - chicken breast halves, skinless & boneless
- 2 teaspoons olive oil, extra virgin
- CREAM SAUCE:
- 1 can chicken broth, low salt
- 1 tub - cream cheese spread, chive & onion
- 1 tablespoon chives, dried
- - the rest of left over cracker/parmesan mixture
How To Make parmesan crusted chicken in cream sauce w/ rice

Step 1Cook rice according to directions on package using the broth & water.

Step 2Meanwhile, mix cracker crumbs & parmesan cheese on plate. Rinse chicken with cold water; gently shake off excess water. Dip chicken in crumb mixture, turning over to evenly coat both sides of each chicken breast with the crumb mixture.

Step 3Heat oil in large non stick skillet on medium heat. Add chicken; cook 5 - 6 minutes on each side or until golden brown on both sides & cooked through. Place chicken on serving plate; cover to keep warm.

Step 4Add broth, cream cheese spread & chives to same skillet. Cook on medium heat until mixture just comes to a boil, stirring frequently. Serve over rice. Spoon sauce over chicken. Serve with green beans or asparagus.
