My Pap Pap loved to cook! You could find him in the kitchen a lot, he cooked more than my grandmother I think. Once she passed away he starting getting "creative" with his cooking and it was not necessarily something anyone but him would enjoy - like his Hot Dog Quiche :) This is his recipe for Chicken A La King that he used to make for his family and friends.

Ingredients
- 5 or 6 pounds chicken
- 5 - carrots, sliced
- 1 jar pimento, cut in pieces
- 5 - stems celery, cut in pieces
- 1 large green pepper
- 1 large can mushrooms pieces and stems
- 1 can peas
- 1 can milk
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 - bay leaf
- 1/2 teaspoon sweet basil
- 1 teaspoon parsley
How To Make pap pap's chicken a la king

Step 1Cut chicken into fourths and put in stockpot. Use enough water to cover chicken at least 2 inches. Bring to boil and let simmer for 2 hours. Put carrots, celery with leaves, bay leaf, and basil in pot after first hour.

Step 2Make a roux: Melt 1/2 pound butter in heavy pot or large skillet. Add flour and mix constantly over low heat. Add stock from the chicken to make sauce. Remove chicken from pot; cook and take meat off bones.

Step 3Add to the sauce the mushrooms, peas, chopped green pepper, parsley and pimentos. Sauce should be heavy. Use milk to thin out. Salt and pepper to taste.
