How to Make Pap Pap's Chicken A La King
- Cut chicken into fourths and put in stockpot. Use enough water to cover chicken at least 2 inches. Bring to boil and let simmer for 2 hours. Put carrots, celery with leaves, bay leaf, and basil in pot after first hour.
- Make a roux: Melt 1/2 pound butter in heavy pot or large skillet. Add flour and mix constantly over low heat. Add stock from the chicken to make sauce. Remove chicken from pot; cook and take meat off bones.
- Add to the sauce the mushrooms, peas, chopped green pepper, parsley and pimentos. Sauce should be heavy. Use milk to thin out. Salt and pepper to taste.
