Ingredients

  • 5 - chicken breast (*)
  • 2 cups chicken broth
  • 3/4 cup celery; diced
  • 1/4 - cabbage; sliced into strips
  • 1 - onion
  • 1/3 cup scallions; cut into pieces
  • 1 cup carrots; matchstick sliced
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 1 package rice noodles
  • 1 clove garlic
  • - salt and pepper to taste
  • (*) - try adding additional meats or substituting with shrim, pork, or beef

How To Make pancit

  • Step 1
    Add vegetable oil in a large pan or wok. Saute garlic and onions.
  • Step 2
    Cut chicken into bite size pieces and add to pan with garlic and onions. Cook until done.
  • Step 3
    Wet the rice noodles to soften and set aside.
  • Step 4
    Add the chicken broth and all the vegetables. Continue to cook for 10 minutes over medium heat or until the vegetables are at the done-ness you prefer.
  • Step 5
    Add the rice noodles and soy sauce to the pan. Cook for about 5 minutes or until the noodles are soft.
