Ingredients
- 5 - chicken breast (*)
- 2 cups chicken broth
- 3/4 cup celery; diced
- 1/4 - cabbage; sliced into strips
- 1 - onion
- 1/3 cup scallions; cut into pieces
- 1 cup carrots; matchstick sliced
- 2 tablespoons vegetable oil
- 3 tablespoons soy sauce
- 1 package rice noodles
- 1 clove garlic
- - salt and pepper to taste
- (*) - try adding additional meats or substituting with shrim, pork, or beef
How To Make pancit

Step 1Add vegetable oil in a large pan or wok. Saute garlic and onions.

Step 2Cut chicken into bite size pieces and add to pan with garlic and onions. Cook until done.

Step 3Wet the rice noodles to soften and set aside.

Step 4Add the chicken broth and all the vegetables. Continue to cook for 10 minutes over medium heat or until the vegetables are at the done-ness you prefer.

Step 5Add the rice noodles and soy sauce to the pan. Cook for about 5 minutes or until the noodles are soft.
