This is my favorite Filipino recipe. I learned to make it from my friend Mercedita who is frrom the Philippines .

  • 18.9 oz.) pkg
    thin rice noodles
  • 1
    cooked chicken breast cut in small pieces
  • 1 stalk(s)
    celery, sliced
  • 2 c
    chopped cabbage
  • 1 large
    carrot, peeled and sliced
  • 4 small
    cremini mushrooms, sliced
  • 2 c
    chicken broth
  • 2 Tbsp
    canola oil
  • to taste
    ground black pepper
  • 2 tsp
    minced onion
  • 1 Tbsp
    soy sauce i use low sodium
  • 1 clove
    minced garlic

How to Make Pancit


  1. Soak the noodles in boiling water for 3 minutes.
  2. Heat the oil in a skillet. Add the
  3. Saute the garlic until lightly browned.
  4. Add the chicken pieces.and onion cook until the chicken is done.
  5. Add the mushroons and saute for 2-3 minutes or until mushrooms are cooked.
  6. Add the chicken broth, soy sauce and pepper. Stir to mix.
  7. Bring to a boil. Add vegetables and noodles. Stir.
  8. Cook for 3-5 minutes or until the veggies are tender crisp.
  9. Serve with lime wedges if desired. You can add basil if you want it to be Thai style.
  10. You can use any veggies eg. broccoli, snow peas, and green beans. You can also add shrimp. Just add along with the chicken.
  11. Frequently I also use mung bean noodles. Just do a package of the rice noodles and a package of the mung bean noodles.
