This is my favorite Filipino recipe. I learned to make it from my friend Mercedita who is frrom the Philippines .

Ingredients
- 18.9 oz.) packages thin rice noodles
- 1 - cooked chicken breast cut in small pieces
- 1 stalk celery, sliced
- 2 cups chopped cabbage
- 1 large carrot, peeled and sliced
- 4 small cremini mushrooms, sliced
- 2 cups chicken broth
- 2 tablespoons canola oil
- to taste - ground black pepper
- 2 teaspoons minced onion
- 1 tablespoon soy sauce i use low sodium
- 1 clove minced garlic
How To Make pancit

Step 1Soak the noodles in boiling water for 3 minutes.

Step 2Heat the oil in a skillet. Add the

Step 3Saute the garlic until lightly browned.

Step 4Add the chicken pieces.and onion cook until the chicken is done.

Step 5Add the mushroons and saute for 2-3 minutes or until mushrooms are cooked.

Step 6Add the chicken broth, soy sauce and pepper. Stir to mix.

Step 7Bring to a boil. Add vegetables and noodles. Stir.

Step 8Cook for 3-5 minutes or until the veggies are tender crisp.

Step 9Serve with lime wedges if desired. You can add basil if you want it to be Thai style.

Step 10You can use any veggies eg. broccoli, snow peas, and green beans. You can also add shrimp. Just add along with the chicken.

Step 11Frequently I also use mung bean noodles. Just do a package of the rice noodles and a package of the mung bean noodles.
