Cooking from my roots. Paella is something people are afraid to try but in fact it's quite easy. You throw all the ingredients together and the end result is a meld of flavors and textures that leave you satisfied.

Ingredients

1 c
uncooked spanish rice
1 1/4 c
chicken broth

peeled large shrimp

skinless chicken thighs
2 oz
sliced dried chorizo
1/4 c
roasted red peppers, cut into strips
1/4 c
pimento olives
1/2 tsp
smoked paprika

How to Make Paella Foil Pack over grill

Step-by-Step

  • 1Combine 1 cup uncooked Spanish rice mix, 1 1/4 cups chicken broth, 6 peeled large shrimp, 2 skinless chicken thighs, 2 ounces sliced dried chorizo, 1/4 cup each pimiento-stuffed olives and roasted pepper strips, and 1/2 teaspoon smoked paprika.
  • 2Mix together and pour into a disposable pie pan. Drizzle with olive oil, salt & pepper to taste. Seal the pan in foil.
  • 3Grill over medium-high heat, 30 minutes.
