So easy To make and the flavor is worth the wait.Crock pots are my friend. A meal that cooks while you are out taking care of your day. All you need are tortillas and cheese...yummmmm. I also have made taco salads and enchiladas with this and it was awesome.

Ingredients

4 large chicken breast
1 package taco seasoning mix ( i use williams brand hot)
2 cans roi-tel tomatoes with lime
1 bunch small cilantro chopped

How To Make brandy's overnight mexican chicken

Step 1

Coat chicken with taco seasoning and layer with tomatoes in a crock pot.Cover cook on low overnight and sprinkle cilantro over meat. Cool and serve for dinner. Or put on first thing and let it do it's thing during the day.
