1whole chicken cut-up (2 1/2 - 3 lbs)

1/2 cflour

1 tspcreole seasoning (or more to your taste)

1/4 tsppaprika

1/4 tsppoultry seasoning

1/8 tsppepper

1/4 cunsalted butter, melted

1 crice (uncooked)

1/2 conion, chopped

1/2 ccelery chopped

1garlic clove, crushed

2 Tbspparsley, chopped

2 1/2 cchicken broth
-
1 can15-oz. can stewed tomatoes

salt and pepper to taste
How To Make oven-fried chicken with rice - creole style

1Combine flour, creole seasoning, paprika, poultry seasoning, and pepper - mix well. Coat chicken pieces well in seasoned flour.

2Place skin side down in melted butter in a 9 x 13 baking pan. Bake uncovered at 375 degrees for 20-25 minutes or until lightly browned. Remove chicken from pan.

3Add rice, onion, celery, garlic, and parsley. Place chicken over rice mixture. Combine broth, tomatoes, salt and pepper in a saucepan and bring to a boil. Pour over chicken completely covering rice. Bake, uncovered, 40-45 minutes longer or until chicken is tender and rice is fluffy. **Add additional broth or hot water during baking if needed to prevent dryness.
