I found this recipe in 1992 in the newspaper. Over the years this is the only way I will fix chicken when I want "fried" chicken with mashed potatoes and gravy. It has been a number of years since I have fixed it and so about a week ago I got the recipe out and we had this chicken for dinner. Instead of a whole chicken I just used parts because my husband likes the breast and I like the thighs. Make sure you use a good sour dough French bread for the crumbs. That makes it extra good!

Ingredients
- 1 medium fryer. cut up into pieces
- 1 stick butter
- 2 cloves garlic finely minced
- 1 cup sourdough bread crumbs
- 1/2 cup parmesan cheese
- 1or 2 teaspoons herbs of choice
How To Make oven fried chicken my way.

Step 1Melt the butter and add the garlic. Set aside. In a shallow pan mix the bread crumbs and the Parmesan cheese and the herbs you choose. I like rosemary.

Step 2Dip the chicken pieces into the garlic butter and then put into the bread crumbs and coat well.

Step 3Put the chicken into a baking dish and into a preheated 350 degree oven.

Step 4Now, you don't open the oven door for 1 hour. The chicken comes out to be wonderfully tender with a nice crunch.

Step 5Depending on the size of your chicken you may need to increase the amount of the breadcrumbs and Parmesan cheese.
