I found this recipe in 1992 in the newspaper. Over the years this is the only way I will fix chicken when I want "fried" chicken with mashed potatoes and gravy. It has been a number of years since I have fixed it and so about a week ago I got the recipe out and we had this chicken for dinner. Instead of a whole chicken I just used parts because my husband likes the breast and I like the thighs. Make sure you use a good sour dough French bread for the crumbs. That makes it extra good!

Ingredients

  • 1 medium fryer. cut up into pieces
  • 1 stick butter
  • 2 cloves garlic finely minced
  • 1 cup sourdough bread crumbs
  • 1/2 cup parmesan cheese
  • 1or 2 teaspoons herbs of choice

How To Make oven fried chicken my way.

  • Step 1
    Melt the butter and add the garlic. Set aside. In a shallow pan mix the bread crumbs and the Parmesan cheese and the herbs you choose. I like rosemary.
  • Step 2
    Dip the chicken pieces into the garlic butter and then put into the bread crumbs and coat well.
  • Step 3
    Put the chicken into a baking dish and into a preheated 350 degree oven.
  • Step 4
    Now, you don't open the oven door for 1 hour. The chicken comes out to be wonderfully tender with a nice crunch.
  • Step 5
    Depending on the size of your chicken you may need to increase the amount of the breadcrumbs and Parmesan cheese.
