My family and I love fried chicken, cooked this way. I like to drain the chicken on a wire rack or drain on a brown paper bag, I find paper towels makes it soggy. My family prefers fried wings and thighs. if you cook the breast, you may need to cook a bit longer, depending how you've cut it. The hot sauce is for flavor, the chicken isn't very hot. The liquid on the marinated chicken helps the flour stick and makes the chicken crispy, don't pat it dry.
