oven fajitas
Can't remember when I first found this healthy recipe, perfect for a low carb and high protein diet. I have modified it over the years, but the key is the thick spice and olive oil mixture that coats all the chicken and veggies. You could also use steak. Also, it's one pan so clean up is very simple!

Ingredients
- SEASONING MIXTURE
- 1 1/2 tablespoons chili powder
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 1 teaspoon sugar
- 1 tablespoon cornstarch
- 2 tablespoons plus 2 tsp olive oil
- FAJITAS
- 1 large onion, sliced julienne
- 2 medium green peppers, sliced
- 1 medium red pepper, sliced
- 1 pound chicken breast tenders
- 8 6-inch tortillas
- OPTIONAL
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
How To Make oven fajitas

Step 1Preheat oven to 400 degrees F.

Step 2In a small bowl, add and mix all of the dry ingredients for the seasoning.

Step 3Stir in olive oil and mix until combined.

Step 4Place the onions, peppers, and chicken in a 9×13” baking dish.

Step 5Drizzle the spice and oil mix over the top. Using your hands, mix until everything is well coated.

Step 6Bake for 35-40 minutes, stirring half way.

Step 7Serve with tortillas, sour cream, cilantro and lime wedges, as desired.
