oven baked chicken nuggets

I am all for making things easy, so when I found this recipe, I immediately went the easy route with breadcrumbs and no need to use a food processor. The result was FANTASTIC! I have made these nuggets for adults as well as children, and everyone loves them. You will be wanting to double this recipe after your first sample...they go quickly.

Ingredients

  • 2 cloves garlic
  • 1/4 cup parsley
  • 4 slices wheat bread, stale (i used bread crumbs)
  • 1/4 teaspoon salt
  • 1/4 cup parmesan
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 2 tablespoons margarine (i omitted)
  • 1 pound boneless skinless chicken breasts
  • 1 - egg white

How To Make oven baked chicken nuggets

  • Step 1
    Oven to 425 degrees. Line cookie sheet with foil and spray with PAM. Mince garlic and parsley. Tear bread into small pieces and add with parmesan, onion powder, pepper and salt to parsley. Process in food processor until coarsely crumbled (I substituted bread crumbs and avoided the food processor). Add margarine and process. Put into ziplock. Cut chicken to 1" pieces. Beat egg white, add to chicken, then drain in colander. Shake chicken in ziplock bag of coating. Bake 12-15 min or until crisp.
