I always have jarred basil pesto left over from making pasta dishes. This recipe is a great way to use leftover pesto - it adds a great flavor to baked chicken tenders. Serve with pasta or a side of your choice.

Ingredients

  • 1 pound chicken tenders
  • 1/4-1/2 cup pesto sauce
  • 1/4 cup low-fat mayo (or regular)
  • 1 cup Italian bread crumbs (can sub Panko)
  • 1/4 cup Parmesan cheese
  • salt and pepper

How To Make oven-baked breaded pesto chicken tenders

  • Step 1
Pat chicken tenders dry with a paper towel. Set oven temp to 375 degrees F.
  • Step 2
Combine pesto sauce and mayo - mix well. Mix bread crumbs with Parmesan cheese.
  • Step 3
Dredge chicken tenders in pesto mix and then in bread crumb mix. Place chicken on a prepared baking sheet, separating each chicken tender.
