I've been making this recipe for over 40 years, and my family never tires of it. It is so simple, so easy - it is my last-minute "go to" when I have failed to plan ahead. It is by far my most-requested casserole among my family and friends. Hope you love it as much as we do!

  • 2 c
    chicken, cooked & diced
  • 2 can
    cream of chicken soup
  • 2 can
    diced tomatoes w/green chiles (do not drain)
  • 1/2 tsp
    salt
  • 1/2 tsp
    black pepper
  • 2 c
    medium cheddar cheese, shredded
  • 8 oz
    tortilla chips

    NOTE: For the chicken, I usually saute 2 large or 3 medium boneless chicken breasts in a small amount of oil until they are cooked through and a little brown on both sides. While they are cooking, season with plenty of garlic powder, salt and pepper. As a time-saver, you can also dice up a store-bought rotisserie chicken or use a bag of the pre-cooked chicken fajita strips.

    Preheat over to 375 degrees

    Prepare a 9 x 13 casserole dish with cooking spray or use some other method to prevent sticking.

    In a large mixing bowl, mix all ingredients except the cheese and chips. Stir with a large spoon until smooth and creamy.

    Next, crumble the tortilla chips with your hands and add to the mixture. Stir gently until chips are distributed throughout.

    NOTE: I've never actually measured the chips, but out of a 16 oz bag, I usually crumble up about 3/4 of the bag. Also, leave the chips in fairly large pieces (where a chip is broken into half or thirds). But don't worry too much about this step, this casserole is very forgiving.

    Pour mixture into casserole dish and cover with foil. Bake for 35-40 minutes (until mixture is bubbling in the center).

    Remove foil and cover with cheese. Return to oven and bake another 10 minutes, or until cheese is bubbling and just beginning to brown.

    Allow casserole to "set" for 10-15 minutes before serving. Top individual servings with sour cream, sliced avocado, guacamole and/or your favorite salsa or pico. Or be like me and just eat it all by it's delicious self.
