1 ½ lbs. boneless skinless chicken breasts
oriental dressing: recipe follows
1 tbsp. vegetable oil
1 head cabbage, shredded
1 pkg. frozen snow peas, thawed, drained, 10 oz
4 green onions, thinly sliced
1 red bell pepper, cut into 1 inch strips
1 pkg. ramen noodles, crushed


1Cut chicken into bite size pieces. Put in shallow dish. Pour half the Oriental dressing over the chicken. Marinate, covered in the refrigerator for an hour and then drain. Sauté the chicken in the 1 Tbsp. vegetable oil in a skillet until cooked through; drain. Mix chicken, cabbage, snow peas, green onions and bell pepper in a bowl. Refrigerate, covered, for 1 hour. Add noodles and mix well. Serve with remaining oriental dressing.
Oriental Dressing:
2/3 cup vegetable oil
¼ cup soy sauce
¼ cup lemon juice
3 Tbsp. rice salad vinegar
1 clove garlic, minced
¼ tsp. ginger
½ tsp. salt
¼ tsp. pepper

Mix oil, soy sauce, lemon juice, vinegar, garlic, ginger, salt and pepper in a jar and cover. Shake vigorously.
