I purchase chicken breasts when they are on sale and poach them I can make several meals when in a hurry by using the precooked chicken and this was made by using the poached chicken.

chicken breasts, boneless and skinless
1/2 c
orange marmalade
1 large
3 Tbsp
olive oil
1 1/2 pinch
ginger sliced thin and cut into match stick pieces
1/2 c
orange marmalade
1 Tbsp
apple cider vinegar
scallions thinly sliced
3 clove
garlic grated or thinly sliced
1 oz
10 ounce spinach, discard thick stems
red pepper cut into thin slices
2 Tbsp
toasted sesame seeds

How to Make Orange Ginger Chicken


  • 1Peel skin from orange and cut into matchstick size working over bowl cut out each orange segment and squeeze out the juice.
  • 2In skillet add the oil and saute the garlic, scallions and red pepper until tender 5 to 8 minutes.
  • 3In sauce pan add the 1 tbsp oil and chicken and cook 10 to 12 minutes on both sides until chicken golden. cook the spinach in a pot with no water as the water from rinsing the spinach is enough an just leave the spinach in the pot until i=ts slightly wilted remove spinach from pot squeeze out gently squeeze out any water..sprinkle with s and p to chicken on the spinach and pour the liquid over top sprinkle with sesame seeds.
