I purchase chicken breasts when they are on sale and poach them I can make several meals when in a hurry by using the precooked chicken and this was made by using the poached chicken.

Ingredients For orange ginger chicken

  • 4
    chicken breasts, boneless and skinless
  • 1/2 c
    orange marmalade
  • 1 lg
    orange
  • 3 Tbsp
    olive oil
  • 1 1/2 pinch
    ginger sliced thin and cut into match stick pieces
  • 1/2 c
    orange marmalade
  • 1 Tbsp
    apple cider vinegar
  • 3
    scallions thinly sliced
  • 3 clove
    garlic grated or thinly sliced
  • 1 oz
    10 ounce spinach, discard thick stems
  • sm
    red pepper cut into thin slices
  • 2 Tbsp
    toasted sesame seeds

How To Make orange ginger chicken

    Peel skin from orange and cut into matchstick size working over bowl cut out each orange segment and squeeze out the juice.

    In skillet add the oil and saute the garlic, scallions and red pepper until tender 5 to 8 minutes.

    In sauce pan add the 1 tbsp oil and chicken and cook 10 to 12 minutes on both sides until chicken golden. cook the spinach in a pot with no water as the water from rinsing the spinach is enough an just leave the spinach in the pot until i=ts slightly wilted remove spinach from pot squeeze out gently squeeze out any water..sprinkle with s and p to taste..place chicken on the spinach and pour the liquid over top sprinkle with sesame seeds.
