Ingredients
- 2 tablespoons olive oil
- 1 tablespoon sesame seeds
- 2 pounds chicken cutlets
- 1/6 teaspoon salt & pepper or to taste
- 15 ounces can mandarin oranges in light syrup
- 1 cup chicken broth
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons cornstarch

Step 1Heat oil and sesame seeds in a large nonstick skillet over medium-low heat. Add zest strips and cook, stirring until slightly cooked. Meanwhile season both sides of chicken with salt and pepper.

Step 2When zest is finished add chicken to skillet and cook until golden.

Step 3Add oranges with liquid to skillet and simmer for about 3 minutes.

Step 4Whisk together broth, soy sauce and cornstarch in a bowl. Add mixture to pan with chicken and simmer until sauce thickens and chicken is cooked through.
