orange chicken
This is an easy meal that I prepare often! I actually showed my adult son how to make this when he was at home recently.

Ingredients
- 3 - 4 chicken breast filets
- 2 eggs
- 1 cup flour
- 1/2 cup corn starch
- 1/2 cup olive oil, extra virgin
- 1/4 cup bbq sauce (regular flavor)
- 1/4 cup soy sauce
- 1/2 jar orange marmalade
- 4 cups minute rice
- 4 cups water
- 1 tablespoon butter
How To Make orange chicken
-
Step 1Wash chicken breasts thoroughly, and cut them into small pieces. (I lightly salt and pepper the chicken, and I also add a little sweet ginger.)
-
Step 2Dip chicken into egg wash, and then douse them in the flour/corn starch mixture.
-
Step 3Warm oil in large frying pan to medium heat.
-
Step 4Add chicken to frying pan, and cook completely for about 20 - 25 minutes. Turn chicken often to ensure proper cooking and browning.
-
Step 5Add soy sauce to chicken and stir throughout.
-
Step 6Add bbq sauce to chicken and stir throughout.
-
Step 7Add orange marmalade to chicken, and stir throughout. Let simmer on low heat for about ten minutes until sauce thickens. (Do not cook on too high of heat or it will stick.)
-
Step 8Serve over white rice. I usually make about four cups of rice, according to package directions. (I add a little butter to my boiling water.)
