Ingredients
- 2 tablespoons olive oil
- 4 large boneless skinless chicken thighs
- salt and pepper
- 2 teaspoons poultry seasoning
- 3 cloves garlic minced
- 2 sprigs rosemary minced
- 1/3 cup orange marmalade
- 1/2 cup chicken stock
- 1/3 cup balsamic vinegar
- 2 green onions finely chopped
- 2 cups baby arugula
How To Make orange balsamic glazed chicken thighs

Step 1In a large skillet over med high heat add the oil. Season the chicken with salt, pepper and poultry seasoning. Place in hot oil and cook until browned on both sides.

Step 2Throw in the rosemary and garlic. Mix the marmalade, balsamic vinegar, and chicken stock and pour over the chicken

Step 3Continue to cook over med low heat until chicken is no longer pink inside and the sauce has reduced to a sticky glaze. Add the green onions at the last minute.

Step 4Place the chicken on a plate top with arugula and dress the arugula with any left over sauce in the pan.
