Ingredients

  • 2 tablespoons olive oil
  • 4 large boneless skinless chicken thighs
  • salt and pepper
  • 2 teaspoons poultry seasoning
  • 3 cloves garlic minced
  • 2 sprigs rosemary minced
  • 1/3 cup orange marmalade
  • 1/2 cup chicken stock
  • 1/3 cup balsamic vinegar
  • 2 green onions finely chopped
  • 2 cups baby arugula

How To Make orange balsamic glazed chicken thighs

  • Step 1
    In a large skillet over med high heat add the oil. Season the chicken with salt, pepper and poultry seasoning. Place in hot oil and cook until browned on both sides.
  • Step 2
    Throw in the rosemary and garlic. Mix the marmalade, balsamic vinegar, and chicken stock and pour over the chicken
  • Step 3
    Continue to cook over med low heat until chicken is no longer pink inside and the sauce has reduced to a sticky glaze. Add the green onions at the last minute.
  • Step 4
    Place the chicken on a plate top with arugula and dress the arugula with any left over sauce in the pan.
