This is a flavorful one pot chicken and rice meal. I used different Italian seasonings with chicken thighs, onions, mushrooms, and Jasmine rice, to achieve a flavorful, and savory rice dish. It screams mediterranean flavor. I added Parmesan cheese to bring in all together. I hope you enjoy my delicious comfort meal. From my kitchen to yours. Enjoy

Ingredients

  • 1 large yellow onion chopped
  • 1 cup chopped mushrooms
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 pounds boneless skinless chicken thighs cut into strips
  • 2 cloves pressed or grated fresh garlic
  • 1 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper or about 10 turns on pepper grinder
  • 1/2 teaspoon chicken bouillon powder
  • 21/4 cups chicken stock divided (not broth)
  • 1 cup jasmine rice
  • 5 ounces frozen sweet peas
  • 1 cup shredded parmesan cheese loose packed
  • more salt and pepper to taste

How To Make one pot parmesan italian herbed chicken and rice

  • Step 1
    On medium high heat. Melt butter and olive oil together.
  • Step 2
    Add chopped onion and s mushrooms. Cook about 5-10 minutes until browned. Stir occasionally.
  • Step 3
    Reduce temperature to low heat. Cut each thigh into 4 pieces. Add to onions and mushrooms.
  • Step 4
    Add chicken. Season chicken with all of the herbs salt and pepper.
  • Step 5
    Cook on medium high until thighs are browned and nearly cooked through.
  • Step 6
    With a spatula or spoon. Push chicken aside slightly add the garlic to pan.
  • Step 7
    Cook Garlic approximately one minute or until fragrant. Do not Brown. Stir together with chicken.
  • Step 8
    Add 2 cups chicken stock and rice to pot. Stir well. When it begins to boil. Cover pot and reduce heat to simmer.
  • Step 9
    Simmer 15-20 minutes or until all stock is absorbed into rice.
  • Step 10
    Add 1/4 cup of additional chicken stock to chicken and rice. Stir in frozen pleas. Cover. Simmer about 3-5 minutes.
  • Step 11
    Stir in parmesan cheese. Shut the heat off and cover.. let sit 5 minutes. Taste. Mix in more salt and pepper if needed according to your taste.
  • Step 12
    Stir and serve
