I love oriental food; but, sometimes the rush of life keeps me from cooking. A friend gave me this easy one dish recipe a few years ago--saved my life! :-)

Ingredients

  • 1 bottle
    russian dressing
  • 1 pkg
    dry onion soup mix
  • 1 small
    container of apricot preserves**
  • 1-2 lb
    chicken--boned/boneless (i use boneless,skinless breasts)
  • 2 pinch
    poultry seasoning

How to Make One Dish Sweet and Sour Chicken

Step-by-Step

  1. Preheat oven to 375-400 degrees. While oven is preheating, I slow-boil my chicken in water and poultry seasoning.
  2. In medium bowl, combine dressing, preserves and soup mix.
  3. In an oven-safe casserole dish, place chicken evenly on bottom. Pour sweet and sour mix over top.
  4. Cook for approximately 45 minutes-1 hour. Serve over noodles or rice.
  5. **amount of preserves used can be adjusted to personal taste. This gives the dish it's sweetness.
