vegtable oil

garlic cloves, crushed

bay leaf
1/4 tsp
dried thyme
1/4 tsp
black pepper

tomatoes, peeled and quartered

pimento stuffed green olives
1 1/4 c
dry white wine
1 1/4 c
chicken broth

How to Make OLIVE CHICKEN

Step-by-Step

  • 1SEASON CHICKEN WITH SALT. HEAT OIL IN LARGE SKILLET OVER MEDIUM HIGH HEAT, BROWN CHICKEN IN OIL ABOUT 5 MINS. EACH SIDE.
  • 2ADD GARLIC, BAY LEAF, THYME AND PEPPER AND MIX WELL, THEN STIR IN TOMATOES, OLIVES WINE AND BROTH.
  • 3REDUCE HEAT TO LOW AND SIMMER, UNCOVERED FOR 45 MINS. OR UNTIL CHICKEN IS COOKED THROUGH AND JUICES RUN CLEAR. REMOVE GARLIC AND BAY LEAF AND SERVE.
  • 4CAN BE SERVE OVER RICE IF SO DESIRED
