During our once-a-month girl's get-together, I wanted to serve something light, refreshing, yet filling. This sandwich holds a zesty, fresh taste that has now become a request (or demand?) to many different occassions. And...it is ok to make it just for yourself, too! Enjoy!

Ingredients
- 1/2 cup ranch dressing
- 1/4 cup dijon-style mustard
- 1 teaspoon lemon zest
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon fresh ground black pepper
- 2 cups cubed, cooked chicken
- 1/2 cup crumbled, cooked bacon
- 1/2 cup cubed swiss cheese
- 1/2 cup chopped sweet red pepper
- 1/2 cup halved green grapes
- - lettuce leaves
- 6 - good-quality croissants, split
How To Make not-your-average-chicken-salad-sandwich

Step 1In a large bowl, combine dressing, mustard, zest, salt, and pepper. Add chicken, bacon, cheese, red pepper, and grapes. Gently mix until well-blended.

Step 2Place a lettuce leaf on the bottom half of each croissant. Top each leaf with an equal amount of chicken mixture. Top mixture with remaining croissant halves. Serve and enjoy!
