- 2 pounds chicken thighs, skinless and boneless
- 1 can black beans, canned, drained
- 1 can corn, drained
- 1 tablespoon onion powder
- 1 package flour tortillas...8
- 2 cans red enchilada sauce
- 1 cup chedder cheese, shredded
- - salt and pepper
- 2 tablespoons butter
How To Make not your average chicken enchiladas

Step 1Boil the chicken thighs for about 20 mins.

Step 2let cool and shred, combine with onion powder, salt,pepper and butter and 1 can of the red enchilada sauce, beans and corn.

Step 3In a large baking dish...pour some enchilada sauce on take each flour tortilla and fill with mixture ( equally) roll up and place seam side down on pan, add rest of enchilada sauce on top and sprinkle with cheese

Step 4bake at 350 degrees for 30 mins...ENJOY
