This dish is so easy and delicous! I have made it several times to take to someone who is sick or just had surgery or a baby. They always ask for my recipe! It's a great meal that's quick and when you add a salad and applesauce; a complete meal! Enjoy!

  • 3 c
    cooked, diced chicken
  • 1 can(s)
    delmonte diced white potatoes (drained)
  • 1 can(s)
    delmonte carrots and peas (drained)
  • 1 1/2 c
    chicken broth, low salt
  • 1 can(s)
    cream of chicken soup, fat-free
  • 1 c
  • 1 c
  • 1/2 c
    melted margarine
  • 2 tsp
    baking powder
  • 1/2 tsp
    each of salt and pepper

How to Make No-fuss Chicken Pot Pie


  1. Cook chicken. I usually cook a whole chicken and then cut it up and divide it into 3-cup increments and put into baggies to freeze for quick dinners.
  2. Put cooked chicken into 2 quart casserole dish. Mix potatoes, peas and carrots, soup,salt, pepper and broth together. Pour over chicken. Mix melted margarine, flour, milk and baking powder well and pour over all; do not mix. Do not cover
  3. Bake in preheated 425 degree oven for 30 minutes.
