no fried~ fried chicken

I make Cream Cheese Mashed potatoes with this meal. I boil my potatoes in with 2/3 chicken bullion cubes and when I mash them I add 2 tablespoons of butter and half a brick of cream cheese. My family loves my mashed potatoes this way. Not really for the calorie counters out there , but so worth the taste.

Ingredients

  • tablespoon frenches horseradish mustard
  • tablespoon freshly squeezed lemon juice
  • cup greek plain yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon thyme
  • 2 cups of your favorite bread crumbs or corn bread stuffing (i use a box of stove top stuffing and crush it into crumbs)
  • 4 - boneless,skinless,chicken breast cut into lengthwise strips,pat dry

How To Make no fried~ fried chicken

  • Step 1
    Preheat over to 400 coat baking sheet with spray
  • Step 2
    In large bowl combine,yogurt,mustard,lemon juice,salt and pepper. Mix well and add chicken and mix and set in frig for 15 to 20 mins.
  • Step 3
    Next combine, your dry stuffing and thyme .
  • Step 4
    Now, take one piece of chicken at a time and work it into the stuffing mixture and place on baking sheet.
  • Step 5
    Bake for about 20 minutes , until pieces are golden brown(if crisper chicken is desired after baking ,increase the oven temperature and broil for about 3 minutes. makes 4 to 6 servings
  • Step 6
    serve with veggie and cream cheese mash potatoes and......Bizinga! One great dinner!
