napa cabbage and chicken

This crunchy cabbage is a nice change to the regular cabbage and has plenty of other vegetables which makes a great meal I buy chicken breasts when on sale and pouch them in water with onion and celery cook til no longer pink about 20 minutes then I freeze them and they are ready to make this meal and other chicken dishes.

Ingredients
- 2 large cooked chicken breasts
- 4 cups shredded napa cabbage
- 2 medium carrots julienned
- 1 - each red and green sweet peppers thinly sliced
- 2 - ribs celery sliced diagonally
- 1/2 large english cucumber peeled, cut in half lengthwise and thinly sliced
- 3 - green onions thinly sliced
- 2 cups watermelon cut in 1 inch chunks
- 1/3 cup sliced almonds
- - soy vinaigrette
- 1/4 cup vegetable or canola oil
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce, low sodium
- 2 teaspoons sesame oil
How To Make napa cabbage and chicken

Step 1Shred cabbage put into large salad bowl, prepare all other vegetables and add to cabbage.

Step 2Whisk together the vinaigrette ingredients slice chicken add chicken to salad bowl, pour dressing over salad and toss sprinkle with the almonds..serve with garlic bread.
