This is my version of BBQ chicken pizza that I came up with after watching an episode of Sandra Lee's Semi-Homemade. I made some adjustments to accommodate a Weight Watcher's eating plan and I think it came out pretty well.

We love making pizza at home and this BBQ chicken pizza is delish. The rustic element of the whole wheat crust is complemented by the BBQ sauce and shredded chicken. Crumbled bacon adds some crunch and a wonderful smokiness to the pizza. Thin slices of onion on top create one delicious bite. For a little extra flavor and flair, drizzle a little extra BBQ sauce on top when it comes out of the oven. You're not going to be able to have just one slice.

Ingredients For my own bbq chicken pizza

    12-inch prepared whole wheat pizza crust, thin
  • 1/2
    rotisserie chicken, deboned
  • BBQ sauce - whatever your fave is (I like Sweet Baby Ray's)
  • 6 slice
    center cut bacon, cooked in microwave until almost done, chopped
  • 1 pkg
    shredded low-fat mozzarella cheese, 8 oz.
  • 4 oz
    reduced-fat shredded cheddar cheese
  • 1/2
    medium red onion, sliced thin and separated into strands

How To Make my own bbq chicken pizza

  • Chopping cooked chicken.

    Preheat oven to 425 degrees. Chop or pull apart chicken.
  • Mixing BBQ sauce and chicken.

    Add enough bbq sauce to just coat the chicken - 2-3 tablespoons.
  • Crusts on a baking sheet.

    Place crusts on baking sheets or pizza pans.
  • Spreading BBQ sauce on the crust.

    Spread bbq sauce over each crust to within 1-inch of the edge - use maybe 1/4 cup per crust (more or less to your preference).
  • Half the chicken placed on one crust.

    Place 1/2 the chicken on each crust, spreading out to evenly cover the sauce.
  • Cheese sprinkled on the crust.

    Cover the chicken with mozzarella and cheddar, dividing evenly between the 2 pies.
  • Onion and bacon on top of the pizza.

    Divide the bacon and sliced onion evenly between the 2 pies.
  • Pizza baking in the oven.

    Bake for about 10 minutes until the cheese melts and the bacon starts to brown. Check the bottom of the crust to make sure it's not burning.
  • Pizza baked until cheese is melted.

    If it looks like the crust will burn before the bacon crisps enough, turn on the broiler to finish browning the top.
  • BBQ Chicken Pizza cut into slices.

    Cut into wedges and serve.
