my favorite chicken tetrazzini

This was one of my favorite casseroles to make. And of course, I would use left over turkey for it after Thanksgiving!

Ingredients

  • 2 cups sliced mushrooms
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1/4 cup light cream
  • 1 tablespoon parsley
  • 1 teaspoon salt
  • 1/8 teaspoon to 1/4 teaspoon nutmeg (to your taste)
  • 1/4 teaspoon pepper
  • 3 tablespoons dry white wine, optional
  • 3 cups cubed cooked chicken
  • 1 - 8 oz box spaghetti, cooked & drained
  • 3/4 cup parmesan cheese
  • - additional parsley if wanted

How To Make my favorite chicken tetrazzini

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    In large skillet, cook mushrooms until tender; stir in flour & gradually add the broth.
  • Step 3
    Cook, stirring constantly until sauce comes to boil. Remove; stir in cream, parsley, salt, nutmeg, pepper and the wine (if using).
  • Step 4
    Turn into a a greased 12x8 baking dish; sprinkle with parmesan.
  • Step 5
    Bake uncovered for 30 minutes or til heated through. Garnish with additional parsley, if wanted.
