mr. jim's chicken quesadillas
Hubby has to have these atleast once a week.They make for a good main course also with a bowl of pinto beans.

Ingredients
- 8 - 10 inch flour tortillas
- 1/2 can 1/2 can spicey refried beans
- 4 ounces sour cream
- 1 cup finely chopped bell peppers
- 1 cup finely chopped onions
- 1 tablespoon finely chopped garlic
- 1 tablespoon finely chopped can chipolte peppers
- 1 pound chicken tenders or breasts
- 1 pound grated mexican cheese or your favorite
- 1 teaspoon garlic powder
- 1 stick unsalted butter
- 4 teaspoons oleo for spreading on the tortillas
How To Make mr. jim's chicken quesadillas

Step 1In a large skillet melt the stick of butter

Step 2Cube chicken with meat cutting shears.Cook until no longer pink.

Step 3Add garlic and seasoning's and stir for about 3 minutes.

Step 4Remove chicken mixture,set aside.

Step 5Add peppers and onions.Cook for about 5 minutes.Turn heat down to warm.

Step 6Chop chicken mixture finely.

Step 7Add chicken to peppers and onions and set aside.

Step 8Very lightly butter one side of each tortilla.

Step 9TOP 4 OF THE TORTILLAS WITH MEAT MIXTURE AND CHEESE.(DO NOT BRING MIXTURE TO THE EDGE)I ALSO PUT A THIN LAYER OF REFRIED BEANS AND SOUR CREAM ON BEFORE ADDING THE MEAT MIXTURE.

Step 10Top each prepared tortilla with the other tortilla butter side up and other butter side down.

Step 11Put in skillet or which ever you use and grill on each side.When the tortillas are golden and crispy they are done.

Step 12Cut each one into 8 wedges giving you 32 wedges serving for 8.

Step 13Serve with Sour Cream and Guacamole.Bowl of Pinto Beans goes very nice along with the Quesadillas.
