mr. jim's chicken quesadillas

Hubby has to have these atleast once a week.They make for a good main course also with a bowl of pinto beans.

Ingredients

  • 8 - 10 inch flour tortillas
  • 1/2 can 1/2 can spicey refried beans
  • 4 ounces sour cream
  • 1 cup finely chopped bell peppers
  • 1 cup finely chopped onions
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon finely chopped can chipolte peppers
  • 1 pound chicken tenders or breasts
  • 1 pound grated mexican cheese or your favorite
  • 1 teaspoon garlic powder
  • 1 stick unsalted butter
  • 4 teaspoons oleo for spreading on the tortillas

How To Make mr. jim's chicken quesadillas

  • Step 1
    In a large skillet melt the stick of butter
  • Step 2
    Cube chicken with meat cutting shears.Cook until no longer pink.
  • Step 3
    Add garlic and seasoning's and stir for about 3 minutes.
  • Step 4
    Remove chicken mixture,set aside.
  • Step 5
    Add peppers and onions.Cook for about 5 minutes.Turn heat down to warm.
  • Step 6
    Chop chicken mixture finely.
  • Step 7
    Add chicken to peppers and onions and set aside.
  • Step 8
    Very lightly butter one side of each tortilla.
  • Step 9
    TOP 4 OF THE TORTILLAS WITH MEAT MIXTURE AND CHEESE.(DO NOT BRING MIXTURE TO THE EDGE)I ALSO PUT A THIN LAYER OF REFRIED BEANS AND SOUR CREAM ON BEFORE ADDING THE MEAT MIXTURE.

    Top each prepared tortilla with the other tortilla butter side up and other butter side down.
  • Step 11
    Put in skillet or which ever you use and grill on each side.When the tortillas are golden and crispy they are done.
  • Step 12
    Cut each one into 8 wedges giving you 32 wedges serving for 8.
  • Step 13
    Serve with Sour Cream and Guacamole.Bowl of Pinto Beans goes very nice along with the Quesadillas.
