Ingredients
- 4 boneless skinless chicken breast
- 4 cloves garlic, minced
- salt and pepper
- paprika
- olive oil
- 1 tablespoon butter
- 1 large onion, chopped
- 2 large tomatoes, chopped
- 1 cup good quality mayonnaise
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- fresh chives, for garnish
How To Make mozzarella mayo chicken breast

Step 1Cut slits in the chicken breast, but not all the way through. Stuff the minced garlic into the slits on the chicken. Season with salt, pepper, and paprika. Rub olive oil over each breast and let sit at room temperature for 1 hour.

Step 2Add some oil to a skillet and add a pat of butter. Sear the chicken on both sides and remove to a plate. Preheat oven to 400 degrees F.

Step 3Add the onion and tomatoes to the pan. Cook about 5 minutes then transfer to a baking pan. Mix the mayo, Mozzarella and Parmesan cheese together.

Step 4Brush the mayo mixture over both sides of the chicken breasts and set on top of the onion and tomatoes in the baking dish.

Step 5Bake about 15 to 20 minutes. Serve garnished with chives.
