Ingredients
- 4 boneless skinless chicken breast
- salt and pepper
- paprika
- 4 cloves garlic, minced
- 4 ounces butter, cut into 4 pieces
- olive oil
- 2 medium shallots, small dice
- 4 medium potatoes, peeled and cut into small cubes
- 1 cup shredded mozzarella cheese
- 1/2 cup fresh parsley, chopped
- 1/4 cup heavy cream
How To Make mozzarella chicken breast and potatoes

Step 1Cut the chicken breasts half way through from top to bottom. Open each breast up. Season with salt, pepper, and paprika. Spoon a small amount of garlic into each opening. Top with 1 oz butter each.

Step 2Add olive oil to a pan. Once hot, sear the chicken on non cut side first, then turn over and sear on the other side, about 5 minutes per side. Remove chicken to a plate.

Step 3Add the shallots and potatoes to the pan. Season with salt and pepper and cook about 10 minutes, stirring often.

Step 4Mix the mozzarella cheese, parsley, and heavy cream together. Add the chicken back to the pan on top of the potatoes, cut side up.

Step 5Top each one with some of the mozzarella mixture. Cover and cook about 5 more minutes until cheese is melted.

Step 6Serve with potatoes and veg if desired.
