In Portland, Oregon there is a wonderful Middle Eastern restaurant we enjoy going to. One of the dishes is this one and as a family, we all loved it very much. My husband, Michael, is a wonderful cook and has a 'nose' for detecting ingredients. We played around with it at home and came up with this and it is the same as at the restaurant. Friends have always enjoyed this when we bring it to get-to-gathers. It is very easy; serve it with couscous, Taboule and or your favorit veggie..

Ingredients For moroccan apricot chicken

  • 6
    chicken breasts, halfed, skinless & deboned
  • 1 1/2 c
    apricot jam mixed with:
  • 1/2 c
    water
  • 2 sm
    onions, chopped or quartered
  • 1/3 c
    dark raisins
  • 4 clove
    garlic, smashed and chopped
  • 1 Tbsp
    chicken soup base mixed in:
  • 1 1/2 c
    water

How To Make moroccan apricot chicken

    Just put all the ingredients in a large skillet and slow cook for 60-80 min. Check on moister and adjust as needed. This should be sausy. That's all there is too it and we hope you enjoy it!
