moroccan apricot chicken
In Portland, Oregon there is a wonderful Middle Eastern restaurant we enjoy going to. One of the dishes is this one and as a family, we all loved it very much. My husband, Michael, is a wonderful cook and has a 'nose' for detecting ingredients. We played around with it at home and came up with this and it is the same as at the restaurant. Friends have always enjoyed this when we bring it to get-to-gathers. It is very easy; serve it with couscous, Taboule and or your favorit veggie..

Ingredients
- 6 - chicken breasts, halfed, skinless & deboned
- 1 1/2 cups apricot jam mixed with:
- 1/2 cup water
- 2 small onions, chopped or quartered
- 1/3 cup dark raisins
- 4 cloves garlic, smashed and chopped
- 1 tablespoon chicken soup base mixed in:
- 1 1/2 cups water
