A family favorite on the grill. My husband used to order this in a restaurant. We asked someone that worked there what the "sauce" was and he said they used Western brand salad dressing as a marinade. We can not find Western dressing in our area, so we make our ouwn.

Ingredients

  • 4 - boneless, skinless chicken breast
  • 1/2 cup ketchup
  • 1/2 cup vegetable oil
  • 1/4 cup cider vinegar
  • 1/3 cup sugar
  • 2 tablespoons lemon juice
  • 1/4 teaspoon fresh ground black pepper
  • 4 - pineapple rings, grilled
  • 4 slices monterrey jack cheese

How To Make monterrey chicken

  • Step 1
    Mix together ketchup, vegetable oil, vinegar, sugar, lemon juice and pepper in a large zip top bag. Add chicken breasts and marinate overnight.
  • Step 2
    Grill chicken and pineapple rings. Top grilled chicken breast with pinapple ring and cheese. Move away from heat source and let cheese melt.
