Ingredients
- 3 cans chicken broth
- 1 small onion, chopped
- 1 large carrot, chopped
- 1 rib - celery, chopped
- 1/4 cup red bell pepper, chopped
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/3 cup all purpose flour
- 1/3 cup cold water
- 1 - 8 oz. packages cream cheese, room temperature, cubed
- 2 cups shredded cheddar cheese
- 1 can beer
- OPTIONAL TOPPINGS:
- - popcorn, popped
- - croutons
- - cooked crumbled bacon
- - sliced green onions
- - i'd say - all of the above!!!!
How To Make *** mom's savory cheese soup ***

Step 1In a crock pot, combine the first eight ingredients. Cover & cook on LOW for 7 - 8 hours.

Step 2Combine flour & water until smooth; stir into soup. Cover & cook on HIGH 30 minutes longer or until soup is thickened.

Step 3Stir in cream cheese & cheddar cheese until blended. Stir in beer. Cover & cook on LOW until heated through. Serve with desired toppings.
