This recipe was in my Mom's collection. Its simple and hearty. Good comfort food for a winter day. This is a great way to use leftovers, too.

Ingredients

  • 2 cups cooked, leftover chicken or turkey, cut in bite sized pieces
  • 1 cup cooked rice, leftover ok
  • 1/2 cup frozen uncooked peas, optional
  • 2 cups chicken broth
  • 1/4 cup butter
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt (ok to use less)
  • 1/4 teaspoon poultry seasoning
  • 1 cup milk (low fat ok)

How To Make mom's old fashioned chicken cobbler

  • Step 1
    Preheat oven to 350 degrees. In a medium bowl stir together chicken, rice, peas (if using) and broth. Set aside.
  • Step 2
    Put butter in casserole dish and sit it in the preheating oven until butter is melted. Meanwhile, stir together the remaining ingredients.
  • Step 3
    When butter is melted remove dish from oven carefully. Pour flour mixture into dish. Then spoon chicken mixture into the center of the casserole. Bake uncovered for 45-50 minutes. Let stand about 5 minutes before serving.
