This recipe was in my Mom's collection. Its simple and hearty. Good comfort food for a winter day.

This is a great way to use leftovers, too.

Ingredients

2 c
cooked, leftover chicken or turkey, cut in bite sized pieces
1 c
cooked rice, leftover ok
1/2 c
frozen uncooked peas, optional
2 c
chicken broth
1/4 c
butter
1 c
all purpose flour
2 tsp
baking powder
1 tsp
salt (ok to use less)
1/4 tsp
poultry seasoning
1 c
milk (low fat ok)

How to Make Mom's Old Fashioned Chicken Cobbler

Step-by-Step

  • 1Preheat oven to 350 degrees.

    In a medium bowl stir together chicken, rice, peas (if using) and broth. Set aside.
  • 2Put butter in casserole dish and sit it in the preheating oven until butter is melted.

    Meanwhile, stir together the remaining ingredients.
  • 3When butter is melted remove dish from oven carefully. Pour flour mixture into dish. Then spoon chicken mixture into the center of the casserole.

    Bake uncovered for 45-50 minutes. Let stand about 5 minutes before serving.
