This recipe was in my Mom's collection. Its simple and hearty. Good comfort food for a winter day. This is a great way to use leftovers, too.

Ingredients For mom's old fashioned chicken cobbler

  • 2 c
    cooked, leftover chicken or turkey, cut in bite sized pieces
  • 1 c
    cooked rice, leftover ok
  • 1/2 c
    frozen uncooked peas, optional
  • 2 c
    chicken broth
  • 1/4 c
    butter
  • 1 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1 tsp
    salt (ok to use less)
  • 1/4 tsp
    poultry seasoning
  • 1 c
    milk (low fat ok)

How To Make mom's old fashioned chicken cobbler

    Preheat oven to 350 degrees. In a medium bowl stir together chicken, rice, peas (if using) and broth. Set aside.

    Put butter in casserole dish and sit it in the preheating oven until butter is melted. Meanwhile, stir together the remaining ingredients.

    When butter is melted remove dish from oven carefully. Pour flour mixture into dish. Then spoon chicken mixture into the center of the casserole. Bake uncovered for 45-50 minutes. Let stand about 5 minutes before serving.
