- 3 tablespoons flour
- 2 tablespoons butter
- 2 tablespoons olive oil, extra virgin
- 1 1/4 cups chicken broth, low salt
- 1/4 cup lemon juice

Step 1Pound chicken to 1/2" thickness. Put in flour. In pan, melt butter & oil, add chicken, cook 4 - 5 minutes. Remove to plate.

Step 2Stir reserved flour, add broth & lemon juice; boil 1 minute to thicken. Return chicken to pan, salt & pepper. Serve with lemon sauce over rice.
