Ingredients

  • 2 tablespoons olive oil, extra virgin
  • 1 1/3 pounds chicken tenders, cut 1" pieces
  • - salt & pepper, to taste
  • 1 1/2 tablespoons butter
  • 4 cloves garlic, chopped
  • 2 - shallots, chopped
  • 2 tablespoons flour
  • 1/2 cup white wine
  • - juice from 1 lemon
  • 1 cup chicken stock, no salt
  • 2 tablespoons capers, drained
  • 1/2 cup parsley, chopped
  • 1 pound penne pasta
  • - chives, dried

How To Make *** mom's chicken piccata pasta toss ***

  • Step 1
    Make pasta according to directions on package.
  • Step 2
    Season chicken with salt & pepper. In skillet, 1 Tbsp oil & chicken, cook 6 minutes, turning once.
  • Step 3
    Remove chicken from pan. Reduce heat in skillet, add 1 Tbsp oil, 1 Tbsp butter, garlic & shallots, saute 3 minutes. Add flour, mix well, cook 2 minutes. Whisk wine in & reduce liquid 1 minute. Whisk in lemon juice, broth, parsley & capers, until bubbles. Add remaining butter & add chicken back into pan, heat through 2 minutes.
  • Step 4
    Toss with hot pasta & sauce, add salt & pepper to taste & sprinkle with chives.
