Ingredients
- 2 tablespoons olive oil, extra virgin
- 1 1/3 pounds chicken tenders, cut 1" pieces
- - salt & pepper, to taste
- 1 1/2 tablespoons butter
- 4 cloves garlic, chopped
- 2 - shallots, chopped
- 2 tablespoons flour
- 1/2 cup white wine
- - juice from 1 lemon
- 1 cup chicken stock, no salt
- 2 tablespoons capers, drained
- 1/2 cup parsley, chopped
- 1 pound penne pasta
- - chives, dried
How To Make *** mom's chicken piccata pasta toss ***

Step 1Make pasta according to directions on package.

Step 2Season chicken with salt & pepper. In skillet, 1 Tbsp oil & chicken, cook 6 minutes, turning once.

Step 3Remove chicken from pan. Reduce heat in skillet, add 1 Tbsp oil, 1 Tbsp butter, garlic & shallots, saute 3 minutes. Add flour, mix well, cook 2 minutes. Whisk wine in & reduce liquid 1 minute. Whisk in lemon juice, broth, parsley & capers, until bubbles. Add remaining butter & add chicken back into pan, heat through 2 minutes.

Step 4Toss with hot pasta & sauce, add salt & pepper to taste & sprinkle with chives.
