Ingredients

  • 1 pound chicken breast halves, skinless & boneless
  • 1/4 cup flour
  • - salt & pepper, to taste
  • 1 teaspoon oil
  • 1 teaspoon butter, unsalted
  • 1 clove garlic, crushed
  • 1/2 cup chicken stock, no salt
  • 1/4 cup white wine
  • - juice from 1 lemon
  • 1 tablespoon capers

How To Make *** mom's chicken picatta #2 ***

  • Step 1
    Slice chicken into 1/2" thick slices, place chicken slices between 2 sheets of plastic wrap & pound with rolling pin until 1/4" thick.
  • Step 2
    In large plastic bag or brown paper bag, pour in flour, salt & pepper, close to mix well. Add 1/2 of chicken at a time, shake to coat. Do other 1/2 chicken.
  • Step 3
    In skillet, add oil, butter & garlic on medium heat, as garlic browns, add chicken & cook until brown on both sides.
  • Step 4
    Remove chicken to plate & put in oven (200 degrees F.) to keep warm.
  • Step 5
    Add chicken stock, wine, lemon juice, capers & cook medium heat, scrape bottom to remove bits. Return chicken to pan, about 7 minutes. Turn, sauce will thicken to glaze. Place chicken on plate, top with sauce.
