Ingredients

  • 4 - skinless chicken breasts
  • 1 - egg
  • 3 tablespoons lemon juice, fresh
  • 1/2 cup chicken stock
  • 1/2 cup flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 cup butter, melted
  • 1 tablespoon parsley, chopped
  • 1 - lemon, sliced
  • - capers (optional)
  • - peas (optional)

How To Make *** mom's chicken picatta #1 ***

  • Step 1
    Pound chicken in wax paper, thin.
  • Step 2
    In small bowl, whisk egg & 1 Tbsp lemon juice.
  • Step 3
    In another bowl, combine remaining lemon juice & chicken stock.
  • Step 4
    In another large bowl, sift flour, garlic, paprika & butter.
  • Step 5
    Dip chicken into egg mixture & then in flour mixture. Place in skillet & cook chicken 1 minute. Then pour lemon juice/stock mixture over chicken, cover, cook 10 - 15 minutes.
  • Step 6
    Transfer chicken to platter. Stir sauce in pan & pour over chicken. Sprinkle with parsley & lemon slices.
