Ingredients
- 4 - skinless chicken breasts
- 1 - egg
- 3 tablespoons lemon juice, fresh
- 1/2 cup chicken stock
- 1/2 cup flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 cup butter, melted
- 1 tablespoon parsley, chopped
- 1 - lemon, sliced
- - capers (optional)
- - peas (optional)

Step 1Pound chicken in wax paper, thin.

Step 2In small bowl, whisk egg & 1 Tbsp lemon juice.

Step 3In another bowl, combine remaining lemon juice & chicken stock.

Step 4In another large bowl, sift flour, garlic, paprika & butter.

Step 5Dip chicken into egg mixture & then in flour mixture. Place in skillet & cook chicken 1 minute. Then pour lemon juice/stock mixture over chicken, cover, cook 10 - 15 minutes.

Step 6Transfer chicken to platter. Stir sauce in pan & pour over chicken. Sprinkle with parsley & lemon slices.
