Ingredients For mom's chicken and rice

  • 1 can
    cream of celery soup
  • 1 can
    cream of chicken or mushroom soup
  • 1
    whole chicken cut in pieces
  • 1 c
  • 1 can
  • 1/4 c
    melted margarine
  • 1 Tbsp
    dried celery flakes
  • 1 1/2 tsp
    poultry seasoning
  • 1 tsp
  • 1/2 tsp
    ground pepper

How To Make mom's chicken and rice

    Pre-Heat oven to 425 degrees. Melt margarine and set to side. Spray a 9 x 13 baking pan.

    In a large bowl mix all soup, rice, water and spices; pour into baking pan.

    Take each piece of chicken and dredge into melted margarine then place on top of rice mixture in baking pan. Pour the remainder of the margarine over the top of the chicken and rice then sprinkle with additional Poultry Seasoning, Salt and Pepper.

    Place in oven and bake for 45 minutes to an hour (this depends on the size of chicken pieces.)Bake until golden brown and rice is crusting and pulling away from sides of pan.

    Serves well with a green vegetable and rolls. I hope that you enjoy this meal as much as my family does.

    If you need to feed more people, remember for every 1/2 cup of rice added you will also need to add a can of soup and 1/2 cup of water. I have also found that if you want to cut up breast pieces, this also l works very well and cook a little faster.
