My mother made the best chicken, It was a special on her Menue at her resturant, everyone loved it with mashed potatoes and some macaroni and cheese.. and her wonderful homemade gravy and biscuits.. yum-yum!

Ingredients
- package 1 whole chicken cut into pieces
- - buttermilk enough to cover chicken in a large bowl
- 2 cups self rising flour
- 1 teaspoon galic powder
- 1 teaspoon salt
- 1 teaspoon seasoning salt
- 1 teaspoon pepper
- 1 teaspoon parprika
- - enough oil for frying ( i use peanut oil)
How To Make momma's southeren fried chicken

Step 1wash and completly dry chicken. Place in a large bowl and cover with buttermilk, cover bowl and place into icebox to keep cool for at least 30 minutes

Step 2combine flour and other spices together. You can add or remove any ingredients that you wish it is a matter of taste, My mother never measured so these are just guestimates.. She showed my sister and I how she did it .. so we dont really measure it out either.. it is just a dash and shake of everything.

Step 3Remove chicken from buttermilk allowing excess milk to drip from chicken. Place chicken into flour mixture, coat compleatly. Make sure that the oil is hot enough to sizzel if a bit of flour is tossed in it. places pieces of chicken into pan, careful not ot overfill. Fry for about 10-15 minutes the chicken will release itself from the pan once it is ready to be turned. Fry another 10-15 minutes, be sure not to under cook and not to over cook. place on platter with papper towel to drain oil. reserve some of the oil and all the crispy pieces .. this can be used to make some amazing gravy!
