momma's chicken and corn chowder

This warm, creamy, delicious soup is one of my favorite comfort foods!

Ingredients

  • 1 cup butter
  • 1 pound bacon
  • 1/2 cup chopped onion
  • 1/4 teaspoon pepper
  • 5 - potatoes, cubed and cooked part way
  • 4 - carrots, diced small
  • 1 cup celery, diced small
  • 3 cups frozen corn
  • 1 1/4 cups flour
  • 8 cups chicken broth
  • 7 cups heavy cream
  • 1 1/2 tablespoons chicken base
  • 2 pounds chicken breast, chopped

How To Make momma's chicken and corn chowder

  • Step 1
    Cut and boil chicken breast until cooked through, about 20 minutes.
  • Step 2
    Fry bacon in large skillet, until crisp, crumble and place on paper towel to cool. Save the bacon grease. (I cut my bacon before frying to finish faster)
  • Step 3
    To the bacon grease add, butter. After butter is melted saute onions, carrots, and celery, until veggies are tender.
  • Step 4
    Add flour small amounts at a time, stir and cook about 5 minutes. (This will bubble up and cook the taste of flour out)
  • Step 5
    Transfer to a soup pot, add chicken, chicken broth, chicken base, and pepper, simmer for 20 minutes. Stir often, this will be thick.
  • Step 6
    Add corn, potatoes, bacon, and heavy cream. Simmer until warm, stir often.
