moist & tender fried chicken

You'll never guess where this recipe came from. I called Direct TV and the guy I spoke with started talking about food while making our changes. He told me about this chicken recipe. He said this technique makes the chicken very moist and tender inside. I'm thinking it's because of rubbing each piece with olive oil. I assured him that I would try it and I'm so glad I did because it's a keeper. Just wish I could remember his name.

Ingredients

  • - whole chicken or chicken pieces
  • - olive oil
  • - seasonings
  • - flour
  • - shortening or oil for frying
  • USE YOUR OWN JUDGEMENT FOR THE AMOUNTS

How To Make moist & tender fried chicken

  • Step 1
    Cut individual pieces if using a whole chicken. Wash and clean really well then pat dry with a paper towel.
  • Step 2
    Generously rub each piece with olive oil. Season with your choice of seasonings (such as salt, pepper, garlic powder, paprika, etc). Place into a ziplock bag and refrigerate for 30 minutes to 1 hour.
  • Step 3
    Season flour with your choice of spices then dredge each piece and fry until golden brown.
