mississippi-ish chicken
I woke up this morning and had no idea what to have for dinner. I had chicken thighs in the freezer and veggies in the fridge. I saw a few items in the pantry and pulled those out, and thought of a Mississippi pot roast and thought, "Why not chicken?" Added these odds and ends, and boom, DINNER.

Ingredients
- 4 - 6 boneless chicken thighs
- 2 tablespoons buttery poultry blend
- 2 - 3 medium potatoes
- 1 large bell pepper
- 1/2 large Vidalia onion
- 1/2 cup chicken broth
- 1 jar chicken garlic gravy
- 1 package ranch seasoning mix
- 1 package Knorr or Lipton onion dry mix
- 1/2 stick butter, cold
- 6 - 8 whole pepperoncini
- 1/4 cup pepperoncini pepper juice
How To Make mississippi-ish chicken

Step 1Season chicken thighs and place them in the bottom of the Crock Pot.

Step 2Add potato, bell pepper, and onion chunks.

Step 3Add the onion and the ranch seasoning packets.

Step 4Add the jar of ready-made gravy, the chicken broth, and the pepperoncini juice.

Step 5Add pats of butter.

Step 6Put the lid on the Crock Pot and set it on high for 4 hours.

Step 7When done, give it a little mix. Serve with rice and bread rolls.
