I woke up this morning and had no idea what to have for dinner. I had chicken thighs in the freezer and veggies in the fridge. I saw a few items in the pantry and pulled those out, and thought of a Mississippi pot roast and thought, "Why not chicken?" Added these odds and ends, and boom, DINNER.

Ingredients

  • 4 - 6 boneless chicken thighs
  • 2 tablespoons buttery poultry blend
  • 2 - 3 medium potatoes
  • 1 large bell pepper
  • 1/2 large Vidalia onion
  • 1/2 cup chicken broth
  • 1 jar chicken garlic gravy
  • 1 package ranch seasoning mix
  • 1 package Knorr or Lipton onion dry mix
  • 1/2 stick butter, cold
  • 6 - 8 whole pepperoncini
  • 1/4 cup pepperoncini pepper juice

How To Make mississippi-ish chicken

  • Step 1
    Season chicken thighs and place them in the bottom of the Crock Pot.
  • Step 2
    Add potato, bell pepper, and onion chunks.
  • Step 3
    Add the onion and the ranch seasoning packets.
  • Step 4
    Add the jar of ready-made gravy, the chicken broth, and the pepperoncini juice.
  • Step 5
    Add pats of butter.
  • Step 6
    Put the lid on the Crock Pot and set it on high for 4 hours.
  • Step 7
    When done, give it a little mix. Serve with rice and bread rolls.
